Ingredients

  • 1 cup dark chocolate chips
  • 1 cup fresh raspberries
  • 1 tablespoon coconut oil
  • 1 tablespoon honey or maple syrup (optional)

Instructions

  1. Melt the dark chocolate chips and coconut oil together in a microwave-safe bowl, stirring every 30 seconds until smooth.
  2. Line a muffin tin with cupcake liners.
  3. Pour a small amount of the melted chocolate into each liner, just enough to cover the bottom.
  4. Add a few fresh raspberries on top of the chocolate layer.
  5. Pour more melted chocolate over the raspberries to cover them completely.
  6. Repeat until all ingredients are used, finishing with a layer of chocolate on top.
  7. Refrigerate for at least 30 minutes or until set.
