Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup
  • 1/2 cup almond flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the cottage cheese, honey (or maple syrup), and vanilla extract until well combined.
  3. Add the rolled oats, almond flour, baking powder, and salt to the mixture and stir until fully incorporated.
  4. If using, fold in the dark chocolate chips.
  5. Drop spoonfuls of the cookie dough onto a baking sheet lined with parchment paper.
  6. Bake for 15-20 minutes or until the edges are golden brown.
  7. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
