Description

A vibrant and nutritious pasta salad bursting with fresh vegetables and feta cheese, perfect for picnics or quick weeknight dinners.


Ingredients

  • 8 ounces pasta (e.g., rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to package instructions. Drain and rinse under cold water.
  2. Combine in a large bowl the pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and feta cheese.
  3. Whisk together olive oil, red wine vinegar, oregano, salt, and pepper in a separate small bowl.
  4. Pour the dressing over the pasta salad and toss to combine.
  5. Serve chilled or at room temperature.
