Instructions

  1. Peel and grate the sweet potatoes using a box grater or food processor.
  2. Place the grated sweet potatoes in a clean kitchen towel and squeeze out excess moisture.
  3. In a large bowl, combine the grated sweet potatoes, chopped onion, olive oil, salt, pepper, garlic powder, and paprika.
  4. Heat a non-stick skillet over medium heat and add a little olive oil.
  5. Once hot, add a portion of the sweet potato mixture to the skillet, pressing it down to form a flat layer.
  6. Cook for about 5-7 minutes on each side, or until golden brown and crispy.
  7. Repeat with the remaining mixture, adding more oil as needed.
