- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion, carrots, and celery. Sauté until the vegetables are tender.
- Stir in the minced garlic and cook for an additional minute.
- Add the diced potatoes, white beans, vegetable broth, thyme, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and let it simmer for about 20-25 minutes, or until the potatoes are tender.
- Adjust seasoning if necessary and serve hot.

- For a creamier texture, blend a portion of the soup and mix it back in.
