- 1 lb ground turkey
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (28 oz) diced tomatoes
- 1 cup corn, frozen or canned
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 tbsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 2 cups chicken broth
Instructions
- In a large pot, brown the ground turkey over medium heat until fully cooked.
- Add the chopped onion, garlic, bell pepper, carrots, and celery. Sauté until the vegetables are tender.
- Stir in the chili powder, cumin, salt, and pepper, cooking for an additional minute.
- Add the diced tomatoes, kidney beans, black beans, corn, and chicken broth. Stir to combine.
- Bring the mixture to a boil, then reduce heat and let it simmer for 30 minutes.
- Serve hot, garnished with your favorite toppings.
