- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 3 ripe bananas, mashed
- 1 cup walnuts, chopped
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a bowl, whisk together flour, baking soda, and salt.
- In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract and mashed bananas.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the chopped walnuts.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- In a separate bowl, whip the heavy cream with powdered sugar until soft peaks form.
- Once the cakes are cool, spread a layer of whipped cream between the two layers and on top of the cake.
- Garnish with additional walnuts if desired.
Notes
- Ensure bananas are very ripe for the best flavor.
- Store leftovers in the refrigerator for up to 3 days.
- This cake can be frozen for up to 2 months; wrap tightly in plastic wrap.
