Instructions

  1. In a saucepan, combine granulated sugar, butter, corn syrup, and heavy cream.
  2. Cook over medium heat, stirring constantly until the mixture reaches 245°F (118°C) on a candy thermometer.
  3. Remove from heat and stir in vanilla extract and salt.
  4. Pour the mixture into a greased 8×8 inch pan and let it cool completely.
  5. In a separate bowl, mix powdered sugar and milk to create a smooth filling.
  6. Once the caramel is set, cut it into squares and fill each square with the vanilla cream filling.
  7. Wrap each caramel in wax paper and store in an airtight container.
