Description

A creamy, refreshing pudding made with cottage cheese and lemon for a healthy dessert or snack.


Ingredients

  • 2 cups cottage cheese (full-fat or low-fat, small-curd recommended)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest (about 1 lemon)
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: fresh berries (strawberries, blueberries, raspberries), extra lemon zest, crushed pistachios or almonds, light dusting of powdered sugar


Instructions

  1. Gather all ingredients and equipment. Wash and dry your lemon, measure out cottage cheese, honey, and vanilla.
  2. Zest the lemon using a microplane or fine grater, avoiding the bitter white pith. You want about 1 tablespoon of zest.
  3. Juice the lemon and strain out seeds. Measure 2 tablespoons of juice.
  4. Add cottage cheese to a blender or food processor. Blend on high for 1-2 minutes until smooth and creamy, scraping down sides as needed.
  5. Add lemon juice, lemon zest, honey (or maple syrup), vanilla extract, and a pinch of salt. Blend again for 30-60 seconds until glossy and pale yellow.
  6. Taste and adjust: add more zest for extra lemon flavor or more honey if too tart. Blend a final time.
  7. Pour pudding into serving bowls or glasses. Chill in the fridge for 30 minutes for best texture (optional).
  8. Serve cold, topped with fresh berries, extra zest, or nuts as desired.

Notes

For sugar-free alternatives, consider using stevia, monk fruit, or allulose. Avoid using honey or maple syrup for strict sugar management.
