Ingredients

- 1 cup couscous
- 2 cups chicken broth
- 1 lb chicken breast, diced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a saucepan, bring chicken broth to a boil.
- Add couscous, cover, and remove from heat. Let it sit for 5 minutes.
- In a skillet, heat olive oil over medium heat and cook the diced chicken until golden brown.
- In a large bowl, combine cooked couscous, chicken, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- Drizzle with lemon juice, and sprinkle with oregano, salt, and pepper. Toss to combine.
- Serve warm or chilled.
Notes
- For a vegetarian option, substitute chicken with chickpeas.
- Feel free to add other vegetables like bell peppers or spinach.
