- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1/2 cup bell peppers, diced
- 1/2 cup onions, diced
- 1 tablespoon olive oil
- 1 teaspoon taco seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add diced onions and bell peppers, sauté until softened.
- Stir in shredded chicken and taco seasoning, cook until heated through.
- Place a tortilla in the skillet, sprinkle half with cheese, and add the chicken mixture.
- Fold the tortilla over and cook until golden brown, then flip to cook the other side.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve with salsa or sour cream.
Notes
- Feel free to add other vegetables like mushrooms or spinach.
- For a spicier kick, add jalapeños to the filling.
- These quesadillas can be made ahead and reheated in the oven.
