Ingredients

- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1/2 cup bell peppers, sliced
- 1/2 cup onions, sliced
- 2 tablespoons olive oil
- 1 teaspoon taco seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium heat.
- Add sliced onions and bell peppers, sauté until softened.
- In a bowl, mix shredded chicken with taco seasoning, salt, and pepper.
- Place one tortilla in the skillet, layer with chicken mixture, sautéed vegetables, and cheese.
- Top with another tortilla and cook until golden brown, then flip and cook the other side.
- Remove from skillet, cut into wedges, and serve hot.
Notes
- Feel free to add other ingredients like black beans or corn.
- Serve with salsa, guacamole, or sour cream.
