Ingredients

  • 1 whole chicken (about 34 pounds)
  • 8 cups of water
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 bay leaf
  • 1 teaspoon of dried thyme
  • 1 cup of egg noodles (optional)
  • Fresh parsley for garnish

Instructions

  1. In a large pot, combine the whole chicken and water. Bring to a boil over medium-high heat.
  2. Add the chopped carrots, celery, onion, garlic, salt, pepper, bay leaf, and thyme to the pot.
  3. Reduce the heat to low and let it simmer for about 1.5 hours, or until the chicken is cooked through.
  4. Remove the chicken from the pot and let it cool. Once cool, shred the chicken into bite-sized pieces.
  5. Return the shredded chicken to the pot. If using, add the egg noodles and cook for an additional 10 minutes.
  6. Remove the bay leaf and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley.

Notes

  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
  • For a richer flavor, you can roast the chicken before adding it to the pot.
