Instructions

  1. In a large bowl, combine the mashed potatoes, sugar, and melted butter.
  2. Add the egg and vanilla extract, mixing well.
  3. In another bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the dry ingredients to the potato mixture, alternating with the milk, until a dough forms.
  5. Roll out the dough on a floured surface to about 1/2 inch thick.
  6. Cut out donuts using a donut cutter or two round cutters.
  7. Heat oil in a deep fryer or large pot to 350°F (175°C).
  8. Fry the donuts in batches until golden brown, about 2-3 minutes per side.
  9. Remove and drain on paper towels.
