- 1 large sweet potato, peeled and grated
- 1 cup ground turkey
- 4 large eggs
- 1 cup milk
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup chopped onion
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, cook the ground turkey and onion over medium heat until the turkey is browned and cooked through.
- In a large bowl, combine the grated sweet potato, cooked turkey mixture, eggs, milk, cheese, salt, pepper, garlic powder, and thyme.
- Pour the mixture into a greased pie dish.
- Bake for 35-40 minutes, or until the quiche is set and the top is golden brown.
- Let it cool for a few minutes before slicing and serving.
Notes
- Feel free to add your favorite vegetables for extra flavor.
- This quiche can be made ahead of time and reheated.
- Store leftovers in the refrigerator for up to 3 days.
