- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup honey
- 3 large eggs
- 1 tablespoon culinary lavender
- 1 teaspoon vanilla extract
- ½ cup sour cream
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined. Press the mixture into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add honey and mix until well combined.
- Add eggs one at a time, mixing well after each addition. Stir in culinary lavender and vanilla extract.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 50-60 minutes or until the center is set but still slightly jiggly.
- Remove from the oven and let it cool. Once cooled, refrigerate for at least 4 hours or overnight.
- Before serving, top with sour cream and a sprinkle of lavender if desired.
