Description

Ingredients

  • 1 teaspoon baking powder

  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk
  • 3 medium apples, peeled, cored, and diced
  • ¼ cup chopped walnuts or almonds (optional)
  • 1 tablespoon turbinado sugar (for topping)
  • 2 cups whole milk
  • 3 large egg yolks
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan and line the bottom with parchment paper.
  3. Whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl.
  4. Cream the softened butter and granulated sugar in a large mixing bowl until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the vanilla extract and buttermilk until combined.
  7. Gradually mix the dry ingredients into the wet ingredients, blending until just combined.
  8. Fold in the diced apples and nuts (if using).
  9. Pour the batter into the prepared cake pan and smooth the top.
  10. Sprinkle the turbinado sugar on top for a nice crunch.
  11. Bake in the preheated oven for 45–50 minutes, or until a toothpick comes out clean when inserted into the center.
  12. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  13. Meanwhile, heat the whole milk in a saucepan over medium heat until steaming.
  14. Whisk together the egg yolks, granulated sugar, vanilla extract, and cornstarch in a bowl until smooth.
  15. Slowly pour the hot milk into the egg mixture while whisking constantly to temper the eggs.
  16. Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened.
  17. Remove from heat and let cool slightly before serving.
  18. Serve slices of cake warm or at room temperature, drizzled with the creamy custard sauce.
