Description

A hearty and comforting soup made with Irish bacon, fresh cabbage, and tender potatoes.


Ingredients

  • 4 slices of Irish bacon
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of chopped cabbage
  • 3 medium potatoes, diced
  • 6 cups of chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the Irish bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add the chopped onion and garlic to the pot and sauté until translucent.
  3. Stir in the chopped cabbage and diced potatoes, cooking for a few minutes.
  4. Pour in the chicken broth and bring to a boil.
  5. Reduce heat and let simmer for about 20-25 minutes, or until the potatoes are tender.
  6. Season with salt and pepper to taste.
  7. Chop the cooked bacon and stir it back into the soup.
  8. Serve hot, garnished with fresh parsley.

Notes

  • For a vegetarian version, substitute bacon with smoked paprika for flavor.
  • Feel free to add other vegetables like carrots or celery for extra nutrition.
