A hearty and comforting soup made with Irish bacon, fresh cabbage, and tender potatoes.
Ingredients

- 4 slices of Irish bacon
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 4 cups of chopped cabbage
- 3 medium potatoes, diced
- 6 cups of chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook the Irish bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
- Add the chopped onion and garlic to the pot and sauté until translucent.
- Stir in the chopped cabbage and diced potatoes, cooking for a few minutes.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and let simmer for about 20-25 minutes, or until the potatoes are tender.
- Season with salt and pepper to taste.
- Chop the cooked bacon and stir it back into the soup.
- Serve hot, garnished with fresh parsley.
Notes
- For a vegetarian version, substitute bacon with smoked paprika for flavor.
- Feel free to add other vegetables like carrots or celery for extra nutrition.
