Description

A hearty and comforting Irish stew made with tender beef and rich Guinness beer, perfect for celebrating St. Patrick’s Day.


Ingredients

Scale
  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 bottle (12 oz) Guinness beer
  • 4 cups beef broth
  • 2 bay leaves
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)


Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the beef cubes and brown on all sides.
  3. Remove the beef and set aside. In the same pot, add onions, carrots, and garlic, and sauté until softened.
  4. Stir in the tomato paste and cook for another minute.
  5. Pour in the Guinness beer and scrape the bottom of the pot to deglaze.
  6. Add the beef back to the pot along with beef broth, bay leaves, thyme, salt, and pepper.
  7. Bring to a boil, then reduce heat and let simmer for 2-3 hours until the beef is tender.
  8. Remove bay leaves before serving and garnish with fresh parsley.

Notes

  • For a thicker stew, you can add a cornstarch slurry towards the end of cooking.
  • This stew can be made a day in advance for better flavor.
