Description

A delightful Irish dessert combining fresh blackberries with whipped cream and Greek yogurt for a creamy, fruity treat.

Ingredients

Scale
  • 2 cups fresh blackberries
  • 1/4 cup sugar
  • 1 teaspoon lemon juice
  • 1 cup heavy cream
  • 1/2 cup Greek yogurt
  • Mint leaves for garnish (optional)

Instructions

  1. Combine the blackberries, sugar, and lemon juice in a bowl. Mash a few blackberries gently to release their juices, then let sit for about 10 minutes.
  2. Whip the heavy cream in another bowl until soft peaks form.
  3. Fold the Greek yogurt into the whipped cream until well combined.
  4. Gently fold the blackberry mixture into the cream mixture, being careful not to break all the berries.
  5. Spoon the mixture into serving glasses and chill for at least 30 minutes before serving.
  6. Garnish with mint leaves if desired.

Notes

For people with diabetes, consider using stevia or monk fruit sweetener instead of sugar. Avoid honey or maple syrup as substitutes.
