Description

A traditional Irish dish made with mashed potatoes and scallions, perfect as a comforting side.


Ingredients

Scale
  • 2 pounds of potatoes
  • 1 cup of milk
  • 4 tablespoons of butter
  • 1 bunch of scallions, chopped
  • Salt and pepper to taste

Instructions

  1. Peel and chop the potatoes into even pieces.
  2. Boil the potatoes in salted water until tender, about 15-20 minutes.
  3. While the potatoes are boiling, heat the milk and butter in a small saucepan until warm.
  4. Drain the potatoes and return them to the pot.
  5. Add the warm milk and butter mixture to the potatoes and mash until smooth.
  6. Stir in the chopped scallions and season with salt and pepper to taste.
  7. Serve hot as a side dish.

Notes

  • For a creamier texture, use heavy cream instead of milk.
  • Feel free to add more scallions for extra flavor.
