A delicious and creamy chicken and mushroom pie, perfect for celebrating St. Patrick’s Day.
Ingredients

- 1 lb chicken breast, diced
- 8 oz mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 2 tbsp olive oil
- 1 tsp thyme
- 1 tsp parsley
- Salt and pepper to taste
- 1 pie crust (store-bought or homemade)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add diced chicken and cook until browned.
- Stir in mushrooms, thyme, and parsley, cooking until mushrooms are tender.
- Pour in chicken broth and heavy cream, simmer until the mixture thickens.
- Season with salt and pepper to taste.
- Transfer the chicken and mushroom mixture into a pie dish and cover with the pie crust.
- Cut slits in the crust to allow steam to escape.
- Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
- Let cool for a few minutes before serving.

- For a richer flavor, you can add a splash of white wine to the filling.
