Description
A hearty and traditional Irish lamb stew perfect for celebrating St. Patrick’s Day.
Ingredients

- 2 lbs lamb shoulder, cut into chunks
- 4 cups beef or lamb broth
- 4 medium potatoes, peeled and diced
- 3 carrots, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 tablespoon fresh thyme
- 1 tablespoon fresh rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the lamb chunks and brown on all sides.
- Stir in the onion and garlic, cooking until softened.
- Add the tomato paste, thyme, and rosemary, stirring to combine.
- Pour in the broth and bring to a boil.
- Add the potatoes and carrots, then reduce heat to low.
- Cover and simmer for about 1.5 to 2 hours, or until the lamb is tender.
- Season with salt and pepper to taste before serving.
