Description

A hearty and traditional Irish lamb stew perfect for celebrating St. Patrick’s Day.


Ingredients

  • 2 lbs lamb shoulder, cut into chunks
  • 4 cups beef or lamb broth
  • 4 medium potatoes, peeled and diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the lamb chunks and brown on all sides.
  3. Stir in the onion and garlic, cooking until softened.
  4. Add the tomato paste, thyme, and rosemary, stirring to combine.
  5. Pour in the broth and bring to a boil.
  6. Add the potatoes and carrots, then reduce heat to low.
  7. Cover and simmer for about 1.5 to 2 hours, or until the lamb is tender.
  8. Season with salt and pepper to taste before serving.
