Irish Potato Soup For St Patrick’s Day

Description

A creamy and comforting Irish potato soup perfect for celebrating St. Patrick’s Day.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Chopped chives for garnish

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the chopped onion and minced garlic, sauté until softened.
  3. Add the diced potatoes and vegetable broth, bring to a boil.
  4. Reduce heat and simmer until the potatoes are tender, about 20 minutes.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in the heavy cream and season with salt and pepper.
  7. Serve hot, garnished with chopped chives.

  • For a vegan version, substitute heavy cream with coconut milk.
