Deliciously soft and slightly sweet cookies inspired by traditional Irish soda bread.
Ingredients

- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1/2 cup buttermilk
- 1 cup raisins or currants
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together the flour, sugar, baking soda, and salt.
- Add the softened butter and mix until crumbly.
- In a separate bowl, whisk together the egg, buttermilk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the raisins or currants.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until golden brown.
- Let cool on a wire rack before serving.
Notes
- For a richer flavor, you can add a teaspoon of cinnamon.
- These cookies can be stored in an airtight container for up to a week.
- Feel free to substitute the raisins with chocolate chips for a different twist.
