Description

A hearty and comforting stew perfect for St. Patrick’s Day, packed with vegetables and barley.


Ingredients

  • 1 cup pearl barley
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 potatoes, diced
  • 1 cup green beans, chopped
  • 1 cup peas
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Rinse the pearl barley under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat.
  3. Add the chopped onion, carrots, and celery, and sauté until softened.
  4. Stir in the garlic, thyme, and rosemary, cooking for another minute.
  5. Add the diced potatoes, green beans, and peas to the pot.
  6. Pour in the vegetable broth and bring to a boil.
  7. Add the rinsed barley, reduce heat, and let simmer for about 30-40 minutes, or until the barley is tender.
  8. Season with salt and pepper to taste before serving.
