Description
A hearty and comforting stew perfect for St. Patrick’s Day, packed with vegetables and barley.
Ingredients

- 1 cup pearl barley
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 potatoes, diced
- 1 cup green beans, chopped
- 1 cup peas
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Rinse the pearl barley under cold water and set aside.
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, carrots, and celery, and sauté until softened.
- Stir in the garlic, thyme, and rosemary, cooking for another minute.
- Add the diced potatoes, green beans, and peas to the pot.
- Pour in the vegetable broth and bring to a boil.
- Add the rinsed barley, reduce heat, and let simmer for about 30-40 minutes, or until the barley is tender.
- Season with salt and pepper to taste before serving.

Notes
- Feel free to add any other seasonal vegetables you have on hand.
- This stew can be made ahead of time and reheated.
- For a thicker stew, you can blend a portion of it and mix it back in.
