Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1/2 cup powdered sugar (for icing)
  • 1 tablespoon milk (for icing)
  • Colored sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, whisk together flour, baking powder, and salt.
  2. Cream the butter and sugar together in a separate bowl until light and fluffy.
  3. Beat in the eggs, vanilla extract, lemon zest, and lemon juice.
  4. Gradually add in the dry ingredients until combined.
  5. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  6. Bake for 10-12 minutes or until edges are lightly golden.
  7. Allow to cool.
  8. Mix powdered sugar and milk for icing until smooth. Drizzle over cookies and top with sprinkles if desired.

Notes

Chilling the dough can enhance texture. Avoid overmixing to keep the cookies tender.
