A refreshing and healthy dish perfect for spring, featuring marinated white beans.
Ingredients

- 2 cups dried white beans
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Soak the dried white beans overnight in water.
- Drain and rinse the beans, then cook them in a pot of boiling water until tender, about 1 hour.
- In a large bowl, whisk together the olive oil, red wine vinegar, minced garlic, oregano, salt, and pepper.
- Add the cooked beans to the bowl and toss to coat them in the marinade.
- Let the beans marinate for at least 30 minutes before serving.
- Garnish with fresh parsley before serving.
