Description

A refreshing and healthy salad inspired by Jennifer Aniston, perfect for spring dinners.


Ingredients

Scale
  • 1 cup couscous
  • 1 1/4 cups boiling water
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped bell pepper
  • 1/4 cup red onion, finely chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. In a bowl, combine couscous and boiling water. Cover and let it sit for 5 minutes.
  2. Fluff the couscous with a fork and let it cool.
  3. Add cucumber, bell pepper, red onion, parsley, and feta cheese to the couscous.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve chilled or at room temperature.
