A refreshing and healthy salad inspired by Jennifer Aniston, perfect for spring dinners.
Ingredients

- 1 cup couscous
- 1 1/4 cups boiling water
- 1/2 cup chopped cucumber
- 1/2 cup chopped bell pepper
- 1/4 cup red onion, finely chopped
- 1/4 cup parsley, chopped
- 1/4 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a bowl, combine couscous and boiling water. Cover and let it sit for 5 minutes.
- Fluff the couscous with a fork and let it cool.
- Add cucumber, bell pepper, red onion, parsley, and feta cheese to the couscous.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
