Ingredients

  • 1 can black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon jerk seasoning
  • 1 can coconut milk
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Stir in the jerk seasoning and cook for another minute.
  4. Add diced sweet potatoes, black beans, coconut milk, and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes until sweet potatoes are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro.
