Description

Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained
  • 1 can (15 oz) pinto beans, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 package (8 oz) cornbread mix
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat until fully cooked.
  3. Add the kidney beans, pinto beans, diced tomatoes, corn, and taco seasoning to the skillet. Stir to combine and heat through.
  4. In a separate bowl, mix the cornbread mix with milk according to package instructions.
  5. In a greased casserole dish, layer the beef mixture, followed by dollops of sour cream, and then pour the cornbread batter on top.
  6. Sprinkle shredded cheddar cheese over the cornbread layer.
  7. Bake in the preheated oven for 30-35 minutes, or until the cornbread is golden brown and cooked through.
  8. Let cool for a few minutes before serving.
