- 1 lb ground beef
- 1 can (15 oz) kidney beans, drained
- 1 can (15 oz) pinto beans, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 package (8 oz) cornbread mix
- 1/2 cup milk
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat until fully cooked.
- Add the kidney beans, pinto beans, diced tomatoes, corn, and taco seasoning to the skillet. Stir to combine and heat through.
- In a separate bowl, mix the cornbread mix with milk according to package instructions.
- In a greased casserole dish, layer the beef mixture, followed by dollops of sour cream, and then pour the cornbread batter on top.
- Sprinkle shredded cheddar cheese over the cornbread layer.
- Bake in the preheated oven for 30-35 minutes, or until the cornbread is golden brown and cooked through.
- Let cool for a few minutes before serving.
Notes
- Feel free to add more vegetables like bell peppers or onions for extra flavor.
- This casserole can be made ahead of time and refrigerated before baking.
