Ingredients

  • 1 lb flank steak
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • Salt and pepper to taste
  • 4 cups cooked rice
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup corn (canned or frozen)

Instructions

  1. In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, salt, and pepper.
  2. Marinate the flank steak in the mixture for at least 30 minutes.
  3. Preheat a grill or skillet over medium-high heat.
  4. Cook the steak for about 5-7 minutes on each side, or until desired doneness.
  5. Let the steak rest for 5 minutes before slicing it thinly.
  6. In bowls, layer cooked rice, sliced steak, cherry tomatoes, avocado, and corn.
  7. Drizzle with additional lime juice and garnish with more cilantro if desired.
