These soft and buttery cookies capture the rich flavor of Kentucky butter cake with a silky glaze.

- 1 stick butter, softened (8 tbsp or 1/2 cup)
- 1/3 cup granulated sugar
- 2 tbsp brown sugar
- 1 egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 2 tbsp butter (for sauce)
- 1/4 cup powdered sugar (for sauce)
- 2 tsp water (for sauce)
- 1/4 tsp vanilla extract (for sauce)
Instructions
- Preheat the oven to 350°F.
- Line a baking sheet with parchment paper and set aside.
- Cream the butter, granulated sugar, and brown sugar together in a stand mixer until smooth.
- Add the egg and vanilla extract and mix until fully combined.
- Add the flour, baking powder, and salt.
- Mix until the flour mixture disappears and the dough forms.
- Scoop 6 equally sized cookie dough balls using a medium cookie scoop.
- Roll the dough balls between the palms of your hands.
- Place the dough balls on the prepared baking sheet.
- Press them gently until about 2 cm thick.
- Bake the cookies for 10 minutes in the preheated oven.
- Melt the butter, powdered sugar, water, and vanilla extract in a small saucepan over medium-low heat.
- Stir continuously until the sugar dissolves and the mixture becomes smooth.
- Do not allow the butter sauce to boil.
- Remove the saucepan from heat and let the sauce rest for about 5 minutes.
- Brush the warm cookies with the butter sauce using a pastry brush.
- Sprinkle a light dusting of powdered sugar over the cookies once the glaze sets.
