- 3 cups graham cracker crumbs (24 full crackers)
- 1/2 cup sugar
- 12 tbsp unsalted butter (melted)
- 24 ounces cream cheese (softened)
- 1 cup sugar
- 3 large eggs
- 14 ounces sweetened condensed milk
- 1 tsp vanilla extract
- 3/4 cup Key lime juice
- 1 tbsp lime zest
- 2 tbsp flour
- 8 ounces cream cheese (softened)
- 1 cup powdered sugar
- 1 tbsp vanilla extract
- 2 cups heavy cream
Instructions
- Preheat the oven to 350°F (175°C).
- Combine graham cracker crumbs and sugar in a large bowl.
- Pour the melted butter into the crumb mixture, stirring until evenly moist.
- Press the mixture into the bottom of a 9-inch springform pan firmly.
- Bake for 8-10 minutes until set. Remove from oven and allow to cool.
- Beat 24 ounces of softened cream cheese in a large bowl until smooth.
- Add 1 cup of sugar and mix until well combined.
- Incorporate the eggs one at a time, mixing well after each addition.
- Pour in the sweetened condensed milk and vanilla extract, blending until smooth.
- Stir in the Key lime juice, lime zest, and flour until just combined.
- Pour the cheesecake mixture over the cooled graham cracker crust.
- Bake for 55-60 minutes or until the center is set but slightly jiggly.
- Turn off the oven and let the cheesecake cool inside for 1 hour.
- Refrigerate the cheesecake for at least 4 hours or overnight to fully set.
- Beat 8 ounces of softened cream cheese in a medium bowl until smooth.
- Add 1 cup of powdered sugar and 1 tablespoon of vanilla extract, mixing until combined.
- Incorporate 2 cups of heavy cream, whipping until stiff peaks form.
- Spread the whipped cream over the chilled cheesecake before serving.
Notes
Use fresh limes for the best flavor. Allow ingredients to come to room temperature for a smoother batter.
