Description

A delightful no-bake twist on classic key lime pie, beautifully layered in mason jars for a charming presentation.


Ingredients

Scale
  • 2/3 cup heavy whipping cream
  • 2 tablespoons granulated sugar
  • 8 ounces cream cheese, softened
  • 7 ounces sweetened condensed milk
  • 1/4 cup bottled lime juice
  • Zest of 1-2 limes
  • 1/2 cup graham cracker crumbs
  • 1 1/2 tablespoons sugar
  • 2 tablespoons unsalted butter, melted


Instructions

  1. Whip the heavy cream with 2 tablespoons of granulated sugar in a mixing bowl until soft peaks form.
  2. Combine the softened cream cheese and sweetened condensed milk in another bowl. Mix until smooth and creamy.
  3. Add the bottled lime juice and lime zest to the cream cheese mixture. Stir until fully incorporated.
  4. Fold the whipped cream into the cream cheese mixture until completely combined, being careful not to deflate the cream.
  5. Prepare the graham cracker crust by mixing graham cracker crumbs, 1 1/2 tablespoons sugar, and melted butter in a separate bowl until crumbly.
  6. Layer the bottom of your mason jars with a generous tablespoon of the graham cracker mixture.
  7. Spoon a layer of the key lime filling over the graham cracker layer, filling the jars about halfway.
  8. Repeat the process with another layer of graham cracker crumbs and then the key lime filling until the jars are just about full, finishing with the filling.
  9. Chill the jars in the refrigerator for at least 2 hours (or overnight) to let the flavors meld together and the filling firm up.

Notes

Chill mixing tools before whipping the cream for better volume.
