Description

A refreshing and vibrant pasta salad perfect for spring dinners, featuring lemon and basil.


Ingredients

  • 8 oz pasta of choice
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cherry tomatoes, cucumber, red onion, and basil.
  3. Add the cooled pasta to the bowl.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
