Description

A refreshing and creamy dessert made with chia seeds and lemon.


Ingredients

  • 1/4 cup chia seeds
  • 1 cup almond milk
  • 1/4 cup lemon juice
  • 2 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon

Instructions

  1. In a bowl, combine chia seeds and almond milk. Stir well and let it sit for 10 minutes.
  2. Add lemon juice, maple syrup, vanilla extract, and lemon zest to the chia mixture. Stir until well combined.
  3. Cover the bowl and refrigerate for at least 2 hours or overnight to allow the chia seeds to expand.
  4. Once set, stir the pudding again and serve in bowls or jars. Garnish with additional lemon zest if desired.
