Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 teaspoon salt
  • 1/2 cup lemon juice
  • 2 large eggs
  • 1 cup powdered sugar
  • 1 teaspoon lemon zest


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, granulated sugar, and salt.
  3. Add softened butter and mix until crumbly.
  4. Press the mixture into the bottom of a greased baking dish.
  5. Bake for 15 minutes or until lightly golden.
  6. In another bowl, whisk together lemon juice, eggs, powdered sugar, and lemon zest.
  7. Pour the lemon mixture over the baked crust.
  8. Bake for an additional 20-25 minutes until set.
  9. Allow to cool before cutting into bars.
