Ingredients

  • Zest of 2 lemons

  • For the Crumb Topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon cinnamon
  • For the Lemon Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice


Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Mix together 2 cups of flour, baking powder, and salt in a bowl.
  3. Cream the butter and sugar together until light in another bowl.
  4. Beat in the eggs, lemon zest, lemon juice, and vanilla.
  5. Combine the dry ingredients with the wet, alternating with the milk.
  6. Divide the batter among the muffin cups.
  7. Combine 1/2 cup flour, granulated sugar, brown sugar, melted butter, and cinnamon in a separate bowl to form a crumbly mixture.
  8. Sprinkle the crumb topping over the muffin batter.
  9. Bake the muffins for 20 minutes or until a toothpick comes out clean.
  10. Allow to cool in the tin for 5 minutes, then transfer to a wire rack.
  11. Whisk together the powdered sugar and lemon juice until smooth for the glaze.
  12. Drizzle the glaze over the cooled muffins.
