Description

Delicious and refreshing lemon fig bars with a creamy cheese filling, perfect for spring desserts.


Ingredients

  • 1 cup fresh figs, chopped
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup lemon juice
  • 1 tsp lemon zest
  • 1/2 cup all-purpose flour
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/4 cup butter, melted


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the cream cheese and sugar until smooth.
  3. Add the lemon juice, lemon zest, and vanilla extract, mixing well.
  4. In another bowl, mix the flour and salt, then gradually add to the cream cheese mixture.
  5. Fold in the chopped figs gently.
  6. Pour the mixture into a greased baking dish and spread evenly.
  7. Bake for 25-30 minutes or until set and lightly golden on top.
  8. Let cool before cutting into bars.
  9. Serve chilled or at room temperature.
