- 24 ounces boneless, skinless chicken breasts (4 (6-ounce) pieces)
- 1.5 pounds yellow potatoes, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon salt (plus more to taste)
- 1 teaspoon black pepper (plus more to taste)
- 4 small zucchinis, sliced into 1-inch pieces
Instructions
- Prepare the Marinade: In a bowl, whisk together the fresh lemon juice, 2 tablespoons of olive oil, minced garlic, dried oregano, paprika, salt, and black pepper.
- Add the Chicken: Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the top, ensuring all pieces are well-coated. Seal the bag or cover the dish, then refrigerate for at least 30 minutes or up to 2 hours.
- Prepare the Potatoes: Preheat your oven to 425°F (220°C). In a large bowl, toss the cut yellow potatoes with olive oil, garlic powder, salt, and black pepper until evenly coated.
- Roast the Potatoes: Spread the potatoes onto a baking sheet lined with parchment paper in a single layer. Roast for 20-25 minutes, flipping halfway through, until golden brown and tender.
- Cook the Chicken: While the potatoes are roasting, heat a large skillet over medium-high heat. Once hot, remove the chicken from the marinade and discard the marinade. Cook the chicken for about 6-7 minutes per side or until cooked through and juices run clear.
- Cook the Zucchini: In the same skillet (after removing the chicken), add the sliced zucchinis and sauté for about 4-5 minutes until tender but still crisp. Season with salt and pepper to taste.
- Assemble Meal Prep Containers: In meal prep containers, divide the roasted potatoes, sautéed zucchini, and pieces of Lemon Garlic Chicken. Allow to cool before sealing and storing in the fridge.
Notes
Marinate the chicken overnight for more flavor. Store leftovers in airtight containers in the fridge for up to 4 days.
