Description

A delightful dessert that combines the tanginess of fresh lemons with a molten center, perfect for any occasion.


Ingredients

  • 1/2 cup unsalted butter
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • Pinch of salt


Instructions

  1. Preheat your oven to 425°F (220°C). Grease four ramekins and place them on a baking tray.
  2. Melt the butter in a microwave and stir in the powdered sugar until well combined.
  3. Add the eggs, egg yolks, and vanilla extract to the butter mixture and whisk until smooth.
  4. Gently fold in the flour, lemon juice, lemon zest, and salt until just combined.
  5. Pour the batter into the prepared ramekins, filling them about 3/4 full.
  6. Bake for about 12-14 minutes, until the edges are firm but the center is soft.
  7. Remove from oven and let sit for 1 minute.
  8. Carefully invert onto a plate and serve warm, optionally with powdered sugar or whipped cream.

Notes

Fill ramekins to 3/4 full to maintain the molten center. Watch baking time to avoid overcooking.
