- 1/2 cup unsalted butter
- 1 cup powdered sugar
- 2 large eggs
- 2 large egg yolks
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/4 cup fresh lemon juice
- Zest of 1 lemon
- Pinch of salt
Instructions
- Preheat your oven to 425°F (220°C). Grease four ramekins and place them on a baking tray.
- Melt the butter in a microwave and stir in the powdered sugar until well combined.
- Add the eggs, egg yolks, and vanilla extract to the butter mixture and whisk until smooth.
- Gently fold in the flour, lemon juice, lemon zest, and salt until just combined.
- Pour the batter into the prepared ramekins, filling them about 3/4 full.
- Bake for about 12-14 minutes, until the edges are firm but the center is soft.
- Remove from oven and let sit for 1 minute.
- Carefully invert onto a plate and serve warm, optionally with powdered sugar or whipped cream.
Notes
Fill ramekins to 3/4 full to maintain the molten center. Watch baking time to avoid overcooking.
