  • 3 large egg whites

  • ½ cup water
  • 2 tablespoons corn syrup
  • 1 tablespoon lemon juice


Instructions

  1. Preheat the oven to 350°F.
  2. Grease a 9-inch springform pan and wrap in aluminum foil.
  3. Pulse graham crackers and brown sugar in a food processor until fine.
  4. Pour in melted butter and mix until damp sand texture.
  5. Transfer the crumbs to the pan and press evenly into the bottom.
  6. Bake the crust for 10 minutes.
  7. Lower the oven temperature to 325°F.
  8. Add granulated sugar and lemon zest to a large bowl, then mix.

  17. Cook sugar, water, and corn syrup until 240°F.
  18. Pour the syrup into egg whites while mixing and beat until stiff peaks form.
  19. Transfer cheesecake to a serving platter, top with meringue and brown the surface.
  20. Slice and serve chilled for best flavor.
