Description

Delicious and easy-to-make lemon oatmeal crumble bars that are perfect for summer baking and can be kept at room temperature.


Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine rolled oats, flour, brown sugar, granulated sugar, melted butter, salt, and baking soda.
  3. Press half of the mixture into the bottom of a greased 9×9 inch baking pan.
  4. In another bowl, mix lemon juice and lemon zest, then spread it over the crust.
  5. Sprinkle the remaining oat mixture on top of the lemon layer.
  6. Bake for 25-30 minutes or until golden brown.
  7. Allow to cool before cutting into bars.
