Description

A delightful and quick mug cake featuring the zesty flavors of lemon and the crunch of poppy seeds, perfect for a single serving treat.


Ingredients

Scale
  • 1/3 cup oat flour
  • 1/2 tsp baking powder
  • 1/2-1 tsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp applesauce
  • 2 tbsps maple syrup
  • Dash of turmeric (optional)
  • 1/4 tsp poppy seeds
  • 1 cup chopped pineapple
  • 1 tsp lemon juice
  • 1/2 tsp lemon zest
  • 1/2 tsp tapioca starch or cornstarch


Instructions

  1. Mix together all the ingredients in a microwave-safe ramekin or mug.
  2. Make sure the batter only fills it about halfway, otherwise, it will overflow.
  3. Microwave for 1-1.5 minutes.
  4. Blend all the ingredients till smooth.
  5. Pour into a microwave-safe bowl and microwave for 2 minutes.
  6. Stir, then microwave for an additional 1 minute on high.
  7. Top your mugcake with frosting and enjoy!

Notes

Adjust lemon juice to your preference for tartness. Experiment with toppings like yogurt or nuts.
