  • 1 cup orzo pasta

  • 1 cup vegetable broth
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. In a large pot, bring vegetable broth to a boil and add orzo pasta. Cook according to package instructions until al dente.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
  4. Stir in lemon juice and zest, and season with salt and pepper.
  5. Once the orzo is cooked, drain and add it to the skillet with the shrimp. Toss to combine.
  6. Garnish with fresh parsley before serving.
