- 1 pound shrimp, peeled and deveined
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 cup vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- In a large pot, bring vegetable broth to a boil and add orzo pasta. Cook according to package instructions until al dente.
- In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes.
- Stir in lemon juice and zest, and season with salt and pepper.
- Once the orzo is cooked, drain and add it to the skillet with the shrimp. Toss to combine.
- Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add red pepper flakes when cooking the shrimp.
- This dish can be served warm or chilled as a pasta salad.
