Ingredients

- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix together the flour, baking soda, baking powder, and salt.
- In another bowl, cream together the butter and sugar until smooth.
- Beat in the egg, vanilla extract, lemon juice, and lemon zest.
- Gradually blend the dry ingredients into the wet mixture.
- Drop by rounded tablespoon onto ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven, or until edges are lightly browned.
- Let cool on wire racks.
