Description

Deliciously soft and chewy lemon sugar cookies perfect for spring.


Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the flour, baking soda, baking powder, and salt.
  3. In another bowl, cream together the butter and sugar until smooth.
  4. Beat in the egg, vanilla extract, lemon juice, and lemon zest.
  5. Gradually blend the dry ingredients into the wet mixture.
  6. Drop by rounded tablespoon onto ungreased cookie sheets.
  7. Bake for 8 to 10 minutes in the preheated oven, or until edges are lightly browned.
  8. Let cool on wire racks.
