Description

Delicious and festive cookies shaped like leprechaun hats, perfect for St. Patrick’s Day celebrations.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • Green icing
  • Chocolate cookies (for the brim)
  • Chocolate candies (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  6. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow the cookies to cool completely.
  9. Once cooled, use green icing to decorate the top of each cookie.
  10. Place a chocolate cookie on the bottom of each decorated cookie to create the brim of the hat.
  11. Add chocolate candies on top for decoration.

Notes

  • For a fun twist, add sprinkles to the icing.
  • Store cookies in an airtight container to keep them fresh.
