Delicious and festive cookies shaped like leprechaun hats, perfect for St. Patrick’s Day celebrations.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- Green icing
- Chocolate cookies (for the brim)
- Chocolate candies (for decoration)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow the cookies to cool completely.
- Once cooled, use green icing to decorate the top of each cookie.
- Place a chocolate cookie on the bottom of each decorated cookie to create the brim of the hat.
- Add chocolate candies on top for decoration.
Notes
- For a fun twist, add sprinkles to the icing.
- Store cookies in an airtight container to keep them fresh.
- These cookies can be made a day in advance.
