A delicious and nutritious pasta recipe loaded with vegetables.
Ingredients

- 12 oz ziti pasta
- 2 cups marinara sauce
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1 cup chopped spinach
- 1 cup diced bell peppers
- 1 cup sliced mushrooms
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the ziti pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, sauté garlic, bell peppers, and mushrooms until softened.
- Add chopped spinach and cook until wilted.
- In a large bowl, combine cooked pasta, sautéed vegetables, marinara sauce, ricotta cheese, and Italian seasoning. Mix well.
- Transfer the mixture to a baking dish and top with mozzarella and Parmesan cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add any other vegetables you like.
- This dish can be made ahead of time and stored in the refrigerator.
- For a spicier version, add red pepper flakes.
