Description

A comforting and healthy soup perfect for spring dinners, packed with vegetables and legumes.


Ingredients

Scale
  • 2 cups vegetable broth
  • 1 cup chopped kale
  • 1 cup diced carrots
  • 1 cup chopped celery
  • 1 cup cooked lentils
  • 1 cup diced potatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. In a large pot, bring the vegetable broth to a boil.
  2. Add the chopped kale, diced carrots, and chopped celery to the pot.
  3. Stir in the cooked lentils and diced potatoes.
  4. Season with dried thyme, garlic powder, salt, and pepper.
  5. Reduce heat and let simmer for 20 minutes until vegetables are tender.
