- 1 cup chopped kale
- 1 cup diced carrots
- 1 cup chopped celery
- 1 cup cooked lentils
- 1 cup diced potatoes
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large pot, bring the vegetable broth to a boil.
- Add the chopped kale, diced carrots, and chopped celery to the pot.
- Stir in the cooked lentils and diced potatoes.
- Season with dried thyme, garlic powder, salt, and pepper.
- Reduce heat and let simmer for 20 minutes until vegetables are tender.
